Crunchy Chai Slice With Cream Cheese Icing

Slice Ingredients

  1. 125gm Butter, softened
  2. 3/4 cup white sugar
  3. 1 ½ cups flour
  4. 1 ½ tsp baking powder
  5. 1 tbsp ground ginger
  6. 2 tsp ground all spice
  7. 2 tsp ground cardamom
  8. 2 tsp ground cinnamon
  9. 1 tbsp lemon zest

Icing Ingredients

  1. 150gm cream cheese, softened
  2. 1 ½ cup icing sugar
  3. 1 tbsp lemon zest
  4. 1 teaspoon lemon juice

SLICE METHOD:

  1. Pre heat oven to 180oC CircoTherm, other ovens pre heat on fan bake 180oC
  2. Cream butter sugars until light and fluffy
  3. In another bowl mix the dry ingredients add to the butter mix with the lemon zest and juice, gently bring all the ingredients together
  4. Grease and line a 24 cm baking tin
  5. Bake 20-25 minutes adding medium vario steam
  6. Cool 2 min before removing from, transfer to a wire rack to completely cool

ICING METHOD:

  1. Beat the cream cheese until soft and smooth add icing sugar, lemon zest and juice, mix to form a nice smooth icing
  2. Ice the slice once it has cooled
