Spicy Roasted Chickpea and Pea Snacks

Serves 4

Pea Snacks Ingredients

2 cups frozen peas, thawed

¼ teaspoon smoked paprika

1 teaspoon olive oil

Spicy Roasted Chickpeas Ingredients:

1x 400g chick peas, drained, rinsed and patted dry

½ teaspoon ground cumin

¼ teaspoon sumac

½ teaspoon turmeric

¼ teaspoon chilli flakes

½ teaspoon salt

Olive oil spray, for cooking

METHOD:

Preheat oven to 180oC, Line 2 baking trays with baking paper.

To make the spicy chickpeas, combine the spices in a bowl, cumin, sumac, turmeric, chilli flakes and salt, mix the spices well. Add the chick peas and toss to coat. Spread evenly over a lined tray in a single layer and spray with olive oil. Place in the reheated oven stirring occasionally, for 35-40 minutes or until golden brown.

Meanwhile gently pat the thawed peas dry and place in a bowl and coat with the paprika and olive oil and stir to coat. Spread out on the second lined tray and add to the oven with the chickpeas for 30 minutes or until crisp, stirring them occasionally.

Leave to cool completely on the baking trays before serving and storing in an air tight container.
