Recipe: Holly’s Gluten Free Pasta

UnserHaus Showroom Manager Holly, shares her delicious gluten free pasta recipe.

INGREDIENTS

  1. 200 gr of all purpose plain gluten free flour plus extra for dusting
  2. 3 large eggs at room temperature
  3. 1 tablespoon of Xanthan gum
  4. Pinch of salt

PREPARATION

Put dry ingredients in a bowl and make a well in the centre.

Add in eggs and slowly start to combine together by hand.

Put gluten free flour on a chopping board/hard surface and put the mixture onto this. Push and Pull/roll it together in a ball to bind for a few minutes until the mixture looks and feels smooth. If it is dry add a little water or oil.

Separate mixture into 3 parts (balls of dough). Keep one part out and the other two in the mixing bowl covered with a damp tea towel so that they don’t dry out whilst you roll out the first part.

Slightly flatten ball out with your hands and dust generously with gluten free flour. Use the optional pasta attachment of your Bosch MUM 5PRO to roll out this piece, keep rolling it out until you get to your desired thickness.

Now for the fun part – cutting it into shapes! You can be as fancy or as basic as you want either with your pasta attachment or by hand using a sharp knife.

The pasta can be dried out overnight on a clothes drying rack or you can cook this fresh and serve with your favourite gluten free pasta sauce, a sprinkle of cheese and a grind of black pepper!
